On Wednesday evening, Jessica Nolie had 126 eggs in her fridge.
In the next room, her dining table was crowded with nearly 50 boxes of cake mix, frosting tubs by the dozen and gallons of oil. All of which were donated by fellow community members and will soon be back into the hands of neighbors by way of birthday cakes for children.
Just a week prior, Nolie had started from scratch with nothing more than a Facebook page and the ingredients in her own kitchen. Under the name Every Candle Counts 518, she took to the web to offer free birthday cakes to kids around Albany. Her initial post garnered more than 700 shares and her inbox was soon overflowing.
“As many requests as I got, I got even more people saying ‘I love what you’re doing, I want to help,’ within the same day,” said Nolie of Albany…
