We sat down with Executive Chef Michael Moscatiello of The Roosevelt Room in Troy, New York. The restaurant has the energy of a big city—upscale, modern American fine dining. Tell us about what your morning routine looks like, and how you like to end your day?
I start my day with 30 minutes on my Peloton, followed by stretching and strength training. I recently earned my master’s degree in Studio Art and work primarily in oil painting. The paintings on the walls of my restaurant are my own. I began painting as a way to unwind after long, stressful days in the kitchen. Painting is very similar to cooking—you must balance color, texture, and composition, and it’s easy to overwork a painting just like a dish. Both require technique, patience, and restraint…
