ALBUQUERQUE, N.M. (KRQE) – A University of New Mexico graduate is returning to his alma mater six months after picking up his diploma, this time opening a new fast-food joint for his fellow Lobos. Hanmin Kim graduated with a master’s in business analytics back in December.

His new street food spot, called Seoul Gimbap, is open for business. The idea to open a restaurant started when he participated in one of the university’s international food festivals. “People really loved it. So after that, I decided to do a little more research. I rented a kitchen space, and started delivering it to students,” said Kim.
