ALBUQUERQUE, N.M. — A New Mexico pizzeria is gaining attention for partnering with another local restaurant for a unique spin on a holiday food favorite.
Richie B’s Pizza is serving a tamale crust pizza featuring fresh masa from La Mexicana Tortilla Company and homemade red chile pork stuffed into a crust to create the tamale filling.
“This was actually inspired by a joke. We were trying to come up with a taco pizza for Cinco de Mayo,” said Chuck Ruiz, owner of Richie B’s Pizza. “I was making it and talking to my guys. I said, ‘this taco pizza has taco meat like my mom used to make.’ We’re thinking about using Sadie’s salsa in it and one of my guys, as a joke, he goes, ‘yeah, and it has a tamale crust.’…
