‘Wait will be worth it!’: Coplay Eatery owners putting finishing touches on sister restaurant

POLK TWP., Pa. – The family behind a popular restaurant in Lehigh County is almost ready to welcome guests to another full-service dining establishment.

Kresgeville Eatery & Bar, a restaurant offering made-from-scratch dishes for breakfast, lunch and dinner, is expected to open in mid-July at 593 Interchange Road in the Kresgeville section of Polk Township, Monroe County, co-owner Edith Garcia told 69 News on Monday.

The new restaurant will occupy a renovated building that previously housed Cherry’s Family Restaurant.

Garcia and her husband, Patrick Sibri, also own and operate the 3.5-year-old Coplay Eatery at 1214 Chestnut St. in Coplay and were looking to serve more customers at another location…
