BETHLEHEM, Pa. – A new restaurant in Bethlehem is on a brief hiatus as it prepares for its grand reopening later this summer.
Swift & Olive, a full-service establishment featuring an elevated dining experience with dishes that incorporate local ingredients, held a soft opening in late May and temporarily closed on Tuesday as the management team makes some changes to the menu and space in advance of the restaurant’s grand reopening on Aug. 6, general manager Lorrie Miller said.
Swift & Olive replaces The Wilbur Restaurant, a fine dining restaurant that opened in late 2022 alongside The Wilbur Mansion, a boutique hotel and event center at 201 Cherokee St.
