BETHLEHEM, Pa. – A rapidly expanding late-night bakery concept, known for offering its “warm, freshly baked cookies” into the early morning hours, is planning to open its first Lehigh Valley location.
A new location of Insomnia Cookies, with more than 300 locations nationwide, will hold a soft opening at 4 p.m. Tuesday, July 15, at 606 E. Third St. in south Bethlehem, store manager Michael Cooley said.
The new location will operate on the ground floor of Six 10 Flats, a new five-story, mixed-use development – featuring more than 70 luxury apartments – on East Third Street between Buchanan and Pierce streets in south Bethlehem.
“This is the first Lehigh Valley location, and we’re super excited,” Cooley said. “Hopefully, it’s the first of more to come in the area.”…
