The former head chef at the now-closed seafood restaurant Adagio has brought his expertise and several popular dishes to another Bethlehem eatery.
Dan Spinosa, who spent a decade at Adagio, is the new head chef for Sotto Santi at 10 W. Fourth St.
Adagio customers will recognize new food items on the menu, including all-you-can-eat crab legs (available 5-9 p.m. Monday through Wednesday); “Peel N’ Eat Shrimp” with cocktail sauce; sliced tuna; the chicken, bacon and ranch sandwich; and the “Black and Blue Burger” with Cajun seasoning, blue cheese crumble, bacon and garlic aioli…
