It had been 13 years since I was last able to indulge in one of my favorite places on the planet, so when I heard Amarillo was getting one of these, both my wife and I about lost our heads and freaking out over the fact that we were going to get to enjoy one of our favorites again.

The moment Qdoba said they were taking over the old Roll Em Up Taquitos location on 45th and Bell, our eyes stayed peeled to the building. Weeks, months passed, no progress. We had heard they were opening the doors on my wife’s birthday.
Well, that day came and passed. The progress was slow until it wasn’t, then all of a sudden, bam, we’re open.
Qdoba has been open for a couple of weeks now, and we’ve been so busy since they opened that we hadn’t had the chance to go there. Yesterday, I couldn’t take it anymore. I had to have it. Apologies to my wife, who is finding out for the first time I had it without her…
