COW serves ice cream scoops, sandwiches and smiles in Amarillo

What started as a dream in a Canyon food trailer is now a full-fledged ice cream shop and eatery bringing hand-crafted flavors and family-driven passion to one of Amarillo’s busiest streets.

Cream Over Waffles — affectionately known as COW — recently opened its first brick-and-mortar shop at 3350 S. Soncy Road, taking over the former Marble Slab Creamery location near Westgate Mall. The new space allows the team to do what they couldn’t fully accomplish inside a trailer: expand their offerings, increase production, and offer customers a cozy, dine-in experience complete with shaded patio seating and a rotating menu of hot and cold comfort foods.

Amanda Gilliland, who co-owns the business with her husband Colby Gilliland and longtime culinary partner Jason Houchins, said the decision to go brick-and-mortar wasn’t just about space — it was about creating a year-round destination that blends gourmet treats with homemade warmth…
