For the Home Cook: Meals Under $10

AMARILLO, Texas (KAMR/KCIT) –As the price of groceries and other items continue to rise, we’ll continue our series and highlight some meals under $10. Two out of the three of these make a great meal prep that you can enjoy for the entire week.

The first recipe doesn’t really have a name, but the ingredients and directions are below. If you want to add to the protein count on this meal, you can add in some leftover chicken to really round out this dish. It can be made with or without rice, but rice is a great way to add to a meal without it costing a lot of money. You can also add to or take away what ingredients you put in this dish or the amount. For this, I went with a 4-6 serving amount.

Ingredients

  • Sausage (I used Jalapeno Cheddar Smoked Sausage from Eckrich because it was the cheapest for the number of links you get)
  • Potatoes (use Russet because they’ll be the cheapest)
  • Bell Peppers (use green because they’re the cheapest)
  • Onion (whichever type you like)
  • Broccoli (you can use frozen, just make sure they’re thawed and the water is drained)
  • Rice (white rice is the cheapest)

Directions

  • Preheat the oven to 425 degrees.
  • Grease two large baking sheets.
  • Toss potatoes with olive oil, sea salt, garlic powder, and pepper.
  • Place on baking sheet and bake for 15 minutes until potatoes are soft.
  • Cut up other vegetables into equal/bite size pieces.
  • Combine all other ingredients into a bowl.
  • Add mixture to potatoes and stir together.
  • Bake for 15 minutes, stir, then bake for another 20, stirring every 10 minutes until the ingredients are roasted and crispy.
  • Serve over rice.
