AMARILLO, Texas (KAMR/KCIT) – A local food truck is bringing loaded comfort food to events across Amarillo.
Owner Myrna Miranda started her business about a year and a half ago with her daughter. The food truck serves up loaded baked potatoes, mac and cheese, fries and Mexican-inspired dishes all made from scratch.

“I was kind of just scrolling, and then I saw a video of this company in California, so I kind of got the idea, and wanted to do something like loaded potato on wheels,” Miranda said. “I started it because I love hosting. I love cooking for my friends.”
