Steak Crostini with Horseradish Cream & Arugula
- 1 lb sirloin, tenderloin, or flank steak
 - 1 French baguette, sliced ½ inch thick
 - 2 tbsp olive oil
 - ½ cup sour cream or crème fraîche
 - 1–2 tbsp prepared horseradish (to taste)
 - 1 tsp lemon juice
 - Kosher salt & cracked black pepper, to taste
 - 1 cup baby arugula
 - Optional garnish: shaved parmesan or balsamic glaze
