AMARILLO, Texas (KAMR/KCIT) —I love Cajun food, the flavors, the spice, the versatility, and the fact that a lot of the ingredients are very affordable. We’ve done segments before about how affordable most vegetables are, as well as rice, and these two recipes combine those perfectly.
Dirty Rice, this dish usually isn’t a main course, that’s more your Jambalaya and Gumbo, Dirty Rice is usually a side dish, but we’re going to add some protein to this dish and make it the main dish instead. I love this because the recipe makes a lot of food, it’s affordable and you can pre-make it and eat it over several days. You can serve this dish as is, or with some toasted bread on the side. If you don’t feel like cooking this dish, there is also a boxed version at the store, and you just add water, or you can enhance the dish by sautéing some bell pepper, onion, and sausage, then adding the packet and some water and the dish would be done in about 20-25 minutes.
