Big Tex Burritos, which sits just east of the iconic Tex Randall statue who greets visitors coming in from the Hereford Highway, was a dream of local restaurant entrepreneurs Colby Monroe, Dallas Hagar and Elgar Navarrete.
It was approved to be funded $50,000 from Canyon Economic Development at the October 2024 Canyon City Commission meeting.
