During a routine health inspection, the Orange County Health Department cited Taiko Udon for multiple violations. It resulted in the temporary closure of the restaurant.

Taiko Udon is a Japanese-Vietnamese fusion restaurant that makes fresh Japanese Udon in-store. According to the inspection report, inspectors noted the following violations:
- An empty paper towel dispenser was observed at the handwashing sink in the kitchen area.
- The report cited accumulated old food residue was observed on the blade of the slicer. Residue buildup was also seen on the white plate inside the ice machine.
- The cold water supply at the kitchen handwashing sink was not operating properly.
- The inspectors reported live cockroaches between the wall and gas pipe behind the cook’s equipment (single burner), on the floor below upright freezer units, and behind the three-compartment sink.
- Dead cockroaches were seen on the floor by the slicer, to the left of the reach-in coolers, in the dry storage room, and in the walk-in cooler.
- Egg casings were seen on the floor below the three-compartment sink and mop sink. The establishment must eliminate the infestation using approved methods, remove all evidence of infestation, and thoroughly clean and sanitize affected areas, according to the report.
- Old food debris, grease, and grime were observed on the exterior and interior surfaces of the cook’s equipment, gas pipes behind cooking equipment, refrigeration and freezer units, shelving racks throughout the facility, and the bottom shelving of the preparation table.
- The exhaust hood filter was found covered with grease and grime buildup.
- Gaps and holes were observed on the wall near the cook’s equipment, on the wall near the handwashing sink, and on the ceiling in the dry storage room.
- The floors along walls near the cook’s equipment, below refrigeration and freezer units, in the walk-in cooler, in the dry storage room, and beneath shelving racks in the kitchen area were covered in grease, grime, and food debris.
