BRIGHTON — The minds behind Nick’s Original House of Pancakes and Uptown Coney Island in Ann Arbor are partnering with a Dexter resident on a new brunch project in Brighton.
Fork & Spoon Brunch House will open in the coming weeks at 101 Brookside Lane, the former Lil’ Chef — which closed in June 2024 after more than five decades in business.
The new eatery comes from Zsofie Towne, Nick Panos and Costas “Gus” Boutsikakis. Panos is the longtime operator of Nick’s Original House of Pancakes, and Boutsikakis has run Uptown Coney Island since the 1990s…
