A Maryland restaurant lays claim to serving one of the best pizzas in the world. White Rabbit Gastropub in Frederick earned international recognition in 2022 when it, alongside its sister concept Rad Pies, won 1st Place for Best Pan Pizza at the International Pizza Expo in Las Vegas.
The annual competition is widely considered the largest and most prestigious pizza competition in the world, drawing hundreds of chefs and pizza makers from across the globe. The winning pie, fittingly named “In Crust We Trust,” took home the gold in the Detroit-style pan pizza category. The pizza features a high-hydration dough designed to create a light, airy interior while still producing the crispy edges that define the style. It is topped with the restaurant’s house cheese blend and finished with what the team calls a “pepperoni crown.”
That signature element comes from a technique known as frico, where pepperoni and cheese are baked directly against the sides of the pan.
