ASHEVILLE – An Asheville restauranteur’s new restaurant is putting a twist on an old-time favorite. On Jan. 22, Crêperie Bouchon opened at 62 N. Lexington Ave. downtown. It has replaced the longstanding Bouchon , which served French comfort food like steak and frites, and is still owned by Michel Baudouin. Crêperie Bouchon, originally introduced downtown in 2010 before closing, offers sweet and savory crepes with many more French classics and French-inspired dishes, including small plates, salads, sandwiches and desserts.
