ASHEVILLE – A Creole and Cajun-style restaurant concept introduced as pop-up events; new restaurants to open and coming; a celebrity look-a-like contest with concert tickets as a grand prize.

Amelie: A New Orleans Cafe pop-ups

Chef Paul Cressend is nearing the day when he can welcome diners into his brick-and-mortar restaurant, Amelie: A New Orleans Café.

Until then, the Asheville-based chef, who hails from Metairie, Louisiana, is inviting guests to sample what’s to come before that day comes. Cressend, a private chef and owner of Paulie Boy Enterprises, has hosted a series of pop-up dining events across the city with more to come this winter, offering menus of rich, flavorful bowls of chicken and andouille sausage gumbo, Creole-style red beans and rice, boudin balls and more.

Cressend said he’s scoped out locations for his intimate cafe, is rallying investors and funding, and is ironing out details for his business plan to make his years-long dream come true. He’s been open with diners about his plans, making them a part of his restaurant journey…
