EVANS, GA — Nordhavn Rustik, a two-part concept combining a Nordic European fine dining restaurant with a European-style bakery and cafe, plans to open in summer 2026 at 406 Town Park Blvd, Evans, GA 30809, owner Dr. John Bojescul told Business Debut.
The project is a ground-up build, with foundation work underway.
What to Expect
Nordhavn Rustik will operate two distinct experiences under one roof: Nordhavn, a fine dining seafood concept with a Nordic and Scandinavian influence, and Rustik, a bakery and deli-style cafe.
While segmented into separate areas, both concepts will share the same kitchen and team, Bojescul told Business Debut. Rustik is also planned to function as overflow dining and a private dining space during evening service.
Menu and Vision
Bojescul described Nordhavn as fine dining with a Nordic seafood focus, built around a menu that is still being finalized. He said the concept is expected to be roughly 70% seafood and 30% meat, with items like cod and halibut among the types of seafood planned, alongside options such as deer, elk, and bison, plus a filet, Bojescul told Business Debut…
