Thirsty Lion Gastropub is bringing its scratch-kitchen menu, cocktails and lively dining-room atmosphere to Lone Tree, with a new restaurant planned for Park Meadows.
The Arizona-based gastropub is preparing to open at 8335 Park Meadows Center Drive, taking over the space formerly occupied by Earls Kitchen + Bar. The new restaurant will span approximately 7,900 square feet, with an opening planned for December 2026, according to the Denver Business Journal.
Thirsty Lion currently operates one Colorado restaurant at Denver’s Union Station, where it has been serving lunch, dinner and weekend brunch. The Lone Tree restaurant will give the brand a second Colorado location and expand its presence into the southern Denver metro area…
