Paperboy opens Denver restaurant in West Highland

DENVER — Austin-based restaurant Paperboy has opened its first Colorado location in Denver’s West Highland neighborhood.

The restaurant, located at 3940 W. 32nd Ave., is Paperboy’s third location and first outside Texas. The concept began as a food trailer in Austin in 2015 before opening a permanent location in 2020. A second Austin location opened last year.
