Eggs Up Grill Cracks Into Round Rock, Eyes January Opening Near Dell HQ

A new breakfast spot is staking its claim in Round Rock’s booming morning dining scene. Eggs Up Grill plans to open a restaurant at 3200 Greenlawn Blvd., Ste. 100, with an eyed launch date of January 2027, bringing its breakfast, brunch and lunch menu to a retail corridor already anchored by heavy daily foot traffic.

The Round Rock restaurant is locally owned by Michael and Rana Bosleah, who plan to open several Eggs Up Grill restaurants across the greater Austin area, according to Community Impact. The couple committed to opening four Eggs Up Grill locations in the North Austin area as part of an eight-unit expansion deal spanning the greater Austin metro region, per Community Impact’s earlier reporting. This Round Rock site marks their second Eggs Up Grill outpost in Williamson County, following their Cedar Park restaurant, which opened in May 2025.

The Bosleahs aren’t newcomers to the local dining scene. Before signing on with Eggs Up Grill, the pair built a restaurant footprint across Williamson and Travis counties by owning Hurricane Grill & Wings in Round Rock and Levant Café & Grill in Cedar Park, giving them established ties to the area’s supply chains and staffing pool.

Why This Corner of Round Rock

The Shops at Greenlawn retail center, where the new restaurant is headed, is shadow-anchored by an H-E-B grocery store that draws more than 2 million annual visitors, and it sits directly across from Dell Technologies’ 2.1-million-square-foot corporate headquarters campus, according to real estate firm CLD Realty.
