It’s the end of an era for a beloved Central Texas restaurant that has been frying up catfish, slinging beers and serving up Southern delicacies for more than four decades.
Carroll Humphrey first opened Springhill Restaurant in the North Austin suburb of Pflugerville back in 1985 as a respite for Central Texans looking for catfish, shrimp, okra and fried green tomatoes. The restaurant’s menu is an ode to Southern cooking and Texas favorites, chock full of seafood feasts, chicken fried steak and burgers.
Now, the business is bidding farewell after 41 years. Signage on the front door confirmed the restaurant will be closing on Friday, October 16, with an online auction underway to sell restaurant memorabilia.
“Look around while eating so you can bid on a piece of Pflugerville history,” signs read. “All items on the walls and in the rafters will be sold. Employees will bring items down on October 17.”
Inside the restaurant, Springhill’s decor pays tribute to iconic Texas brands and local staples, including Bastrop Feed Company, Dixie Pig, Lone Star Beer and Granger Hardware and Tin Shop…
