Austin restaurant pioneers water-saving system amid central Texas drought concerns

AUSTIN, Texas — At the intersection of Hancock Drive and Woodview Avenue in Austin is Fonda San Miguel, a Mex-Mex, not Tex-Mex restaurant, as Co-founder Tom Gilliland likes to call it.

“Nothing wrong with Tex-Mex, but they’re entirely different cuisines, you might say,” Gilliland said.
