AUSTIN (KXAN) — At 19 years old, Connor Garbo may be the youngest food truck owner in Austin. His days are long and grueling as he works to get his truck, Cowboy Cubans, up and going.
“This is a dream come true, to say the least. I worked really, really hard for this,” the young entrepreneur said.
Raised in Key West, Florida, and in Austin, Connor comes from a family well seasoned in the restaurant business. His mother started Garbo’s as a food truck before opening a brick and mortar. Connor grew up around food, trained overseas at Michelin star restaurants and in Key West as a private chef before coming back to Texas to start his own business.
