Ay Mi Pa, which is “Oh my God, my dad” translated in Spanish, offers flavorful dishes inspired by the roots and flavors of the Riviera Maya. Located at Valley Plaza Mall, it has been serving the community for over a year and a half. Elizabeth Diaz, the manager, shared insights into one of their popular dishes called the “Jefe Skillet.”
“This dish is really good. It has four different tastes,” Diaz explained. The dish includes corn, rice, beans, chicken, shrimp, steak, and chorizo, accompanied by two quesadillas, queso fresco, guacamole, and pico de gallo. “It can feed like two people,” she added, noting the grilled onions at the bottom that enhances the flavors.
Diaz highlighted the special seasonings and secret sauce that make the dish unique. “It’s a really good combination of taste,” she said, drawing inspiration from traditional Mexican cooking methods.
