An accomplished Maryland restaurateur has an ambitious new project in the works, one that will be as good for the community and world at large as it is for the individual customers it will serve. Spike Gjerde, the mind behind Woodbury Kitchen, is developing Ecco Market, a “combined production kitchen, trattoria, deli”, reports Baltimore Business Journal.
Gjerde and his team have secured funding for the project which will occupy a 5,000 square foot space in Whitehall Mill, located at 3300 Clipper Mill Road. The project was crowd-funded, and the campaign’s successful completion is reflective of the community’s enthusiasm for a space like Ecco Market.
It isn’t hard to understand why locals would respond favorably to such an ambitious endeavor; Gjerde envisions Ecco Market as “an integrated culinary hub—home to a production kitchen, trattoria, bakery, deli, two bars, and a retail marketplace.”…
