Opening a new restaurant is always a challenge. There’s food, staffing, design, permitting, and marketing decisions to make. But it’s even harder if people aren’t familiar with the cuisine a restaurant serves.
For Giannina Chavez, owner of Brasas Peru, that extra challenge is worth it.
In 2023, Chavez opened Brasas Peru at 7520 Perkins Road. Chavez, who is from Lima, Peru, opened the space in collaboration with her brother and sister-in-law, Renzo and Carolina Ibañez who now live out of state. From ingredients to careful recipe preparation, Chavez and her team work to bring a taste of Peru to the table.
