Chipotle Mexican Grill is expanding its presence in Bellevue with a new lease at The Eight, a 25-story office building downtown.
The restaurant will open in a retail pavilion space within the building’s public plaza, the Bellevue Downtown Network reported.
Chipotle will occupy about 1,900 square feet and be joining Sabine Café and Bar, which has also signed a lease at the property. Chipotle is expected to open in late 2026 while Sabine is projected to open earlier, in late June or early July, according to the BDN article…
