Before restaurants launch a brand-new menu item to every location, they often test them in smaller markets, aiming to understand how well customers will respond to it and getting feedback before scaling up. Chick-fil-A has done this before with menu items including Chicken & Waffles Sandwiches in Maryland and Texas, and a Creamy BBQ Chicken Sandwich in Jacksonville, Florida.
