Food trucks around Magic City expand into brick-and-mortar restaurants

BIRMINGHAM, Ala. (WIAT) – Many people consider Birmingham to be a “foodie” city. From longstanding restaurants to brand new eateries, there is no shortage of places for people to try.

Some spots around the Magic City start on wheels and gain so much popularity, they’re able to jump from food trucks to brick-and-mortar restaurants.

Roll Cajun Boudin is a newer food truck on the scene, only being around for the last two years. The business says it hit its stride in 2025 and has opened a new set of doors, but says the transition has had its own challenges…
