Ah-Beetz Expanding with More New Haven Pizza in Palm Beach County

As New Haven pizza increases in popularity and visibility across the country, Delray Beach ’s Ah-Beetz New Haven Pizza , located at 15200 Jog Road , is preparing to launch a major expansion in Palm Beach County . The restaurant, which prepares its pizzas (and its increasingly popular thrice-fired wings) in a proprietary coal-fired brick oven that reaches temperatures as high as 750 or even 800 degrees, is launching locations in West Palm Beach , Lake Park , and Royal Palm Beach .

“New Haven pizza involves a specific dough process of rise, proof, and ferment that takes place over 48 hours,” a representative told What Now on Tuesday. “We have a unique sauce recipe that uses California canned tomatoes—and also unique is our ratio of sauce to cheese, using both mozzarella and real Pecorino Romano, not ‘parmesan.’”

Cooked in the Ah-Beetz oven at insanely high temperatures, the apizza also takes on its distinctive char, through a process (the representative explained) in which the high heat brings the ingredients’ naturally occurring sugars to the surface and caramelizes them.
