NAMPA — Nate Lindskoog said he knows “a perfect brisket is a myth, it’s like a unicorn.”
Perhaps myth and reality aren’t too far away for The Smoky Pickle, downtown Nampa’s new barbecue restaurant. With brisket, ribs, pulled pork, turkey, and California tri-tip — yet to be unleashed — there is a lot to entice someone to try the new spot.
But this isn’t Lindskoog’s first rodeo. He wants everyone to test the staff now so they can work out all the kinks through late September, which is when Lindskoog estimated they’ll be ready for their grand opening. The Smoky Pickle sits at 112 13th Ave. S., in downtown Nampa…
