They moved to Boise. Now they’ll open 3 chain restaurants with America’s ‘greatest’ sub

A franchise chain that sells “the greatest sandwich in America” will make its Treasure Valley debut soon.

And, like so many restaurants that open in the area, diners can thank Idaho newcomers.

Capriotti’s Sandwich Shop will launch its first location in greater Boise at 200 N. Highbrook Way in Star. The store, which has a target launch date of December, is one of three planned by franchisees Brian and Amanda Robertson. The couple relocated to Idaho from Las Vegas in 2023, according to a press release. Capriotti’s is headquartered in Vegas.

A second Capriotti’s is planned for 2025 in Meridian, a Capriotti’s publicist said in an email. The site of the third location has not been determined, he added.

The Robertsons have been Capriotti’s fans for more than three decades, according to the release, and saw an opportunity in the Treasure Valley.

“Since moving to Boise to be closer to family,” Amanda Robertson explained, “we’ve met plenty of people who have traveled out to Las Vegas purely to get their fix of Capriotti’s.”
