Months after moving, this ‘extreme’ Boise restaurant is closing – ‘with heavy hearts’

The brick-and-mortar experiment is over in Boise for Meltz Extreme Grilled Cheese.

After debuting at 6565 W. Fairview Avenue in 2022, then downsizing and moving to the Boise Spectrum over the summer, the sandwich restaurant is pulling the plug.

Meltz will shutter at the Spectrum after a final day on New Year’s Eve. The restaurant is located inside Chow Public Market and Eatery, 7609 W. Overland Road.

Meltz in Boise made the announcement on social media “with heavy hearts,” describing it as a “difficult decision.”

The good news? “You can still get your grilled cheese fix out on the Mobile Meltz food truck!” Meltz wrote. “It will continue operations for events and catering. You can find the Mobile Meltz food truck schedule on Street Food Finder and by following us on Facebook and Instagram .”

A comfort-food-on-steroids concept, Meltz Extreme Grilled Cheese was founded in 2012 in Coeur d’Alene, where the original store still churns out cheesy creations. Meltz expanded to Boise two years ago, then Bend, Oregon, last year, where it continues to operate.
