In Washington and Idaho—America’s top potato-producing states—Russets, Reds, and Yellows are ideal for decoration, according to the Washington State Potato Commission. Their sturdy skins hold dyes well, and the results can be hidden for backyard hunts or cooked into a post-holiday meal.
