Thick as Thieves opened in 2022 and is downtown Boise’s hidden cocktail haven—an intimate, candle-lit speakeasy where the guest is always the star. Entry begins with a secret: visitors dial 102 on a vintage rotary phone before a mirror-covered door swings open to reveal a dark, moody room designed for memorable, personalized hospitality. Thick as Thieves is built on the belief that service is the most important ingredient in the bar. Every detail of the experience is crafted to make guests feel seen, welcomed, and delighted.
The cocktail program is equally intentional. Technique-driven and powered by extensive daily prep, it draws from culinary inspiration, nostalgic and authentic flavors that are meaningful to our team. Batching or infusions are not allowed in Idaho and these boundaries have pushed us to find new ways to maximize flavor in every drink while also creating a stellar NA program. The team uses clarification, Spinzalls, milk punches, forced carbonation, kakigori, and other advanced methods to create cocktails with precision and character, allowing us to dial in texture, clarity, and consistency. Our ice is hand cut daily to maintain control over dilution and presentation.
