The 4-H and FFA members who join the Boulder County Fair’s junior livestock sale can have a difficult time parting ways with their animals. For 18-year-old Jasper Helgans, knowing that his pig, Quarter, would help feed community members eased that goodbye.
Helgans’ pig was one of a handful of animals that were donated this year to VCP Longmont, a tiny home village for military veterans run by the nonprofit Veterans Community Project. The village at 3095 Mountain Brook Drive in Longmont received roughly 600 pounds of meat — including pork, beef and lamb — from last month’s livestock sale, according to the nonprofit.
After the sale, the animals bound for VCP Longmont were processed, packaged and delivered to the village. The meat is being stored in three freezers: two in a storage unit and one in a model home on the property. The freezers hold pork chops, Italian sausage, bacon, ground beef and ground lamb. Thanks to this year’s donations, each new resident will be welcomed to the village with their tiny home’s freezer stocked with meat that they can cook in their kitchens…
