Denver nonprofit helps fill food gap amid SNAP uncertainty

DENVER — A lot of people look forward to Fridays — and then there is Bob Bell.

“I love getting up before the sun,” Bell said. “We get more done before most people get out of bed, and certainly before they get a coffee, we’re done.”

Bell is the founder of Food for Thought, a volunteer-run nonprofit that serves about 80 schools across the Denver area, distributing approximately 40,000 pounds of food per week. Every Friday morning, volunteers gather under the viaduct at 1600 W. Colfax Ave. to pack PowerSacks, which are bags containing 12 to 15 non-perishable food items designed to sustain families through the weekend when school meals aren’t available…
