A new mobile taco stand Rayo, the Spanish word for lightning bolt, is making landfall in Boulder in late spring.
Rayo owner Gabriela Garza comes from a hospitality background, traveling across the country on a weekly basis to consult for restaurants and hotels. “It was just a tricky lifestyle, considering the travel aspect and then living out of a hotel,” she says. “For someone who loves nature and a little more balance, it wasn’t the lifestyle for me.”
She moved to Boulder a year ago for a change of pace. Though moving to one location after a life of constant travel would be a big adjustment for anyone, Garza still found a vibrancy in Boulder. “Boulder is really happening. There’s just something always going on,” she says. So Garza decided that Boulder was the right place for the taco truck she’d always thought about opening…
