CEDAR RAPIDS, Iowa (KCRG) – This summer I have really been trying to prep more foods. I wanted to show you a couple of my latest lunch obsessions that you can make on the weekend, and have an easy grab-and-go lunch the whole week. This is a category I call dense salads and we are going to pack these full of protein, fiber, carbohydrate and nutrients. They are the perfect combination of deliciousness and the fuel your body needs.
This first one is my quinoa salad. I’ve cooked my quinoa, which is a grain that contains a lot of fiber, protein, and some healthy fats. You cook this very similar to rice. To that we are adding chickpeas and some frozen edamame. I always have both these ingredients on hand. Both are adding protein.
