Gastonia gas station restaurant Groovy Beast expands into new location

After six years of serving breakfast, lunch and dinner from a little shop in Clemmer’s Convenience Store, the owners of Groovy Beast say it is time for their restaurant’s next phase.

The business will be saying hello to an expanded drink menu, new hours and a new staff at its new stand-alone location at 1611 Westover St. in Lowell.

When Aaron and Carolyn Tyson opened Groovy Beast on July 18, 2017, “the timing was just right,” according to Aaron Tyson.

Carolyn grew up on a farm, and Aaron grew up in the food industry, so the food industry seemed to run in their blood, he said.

While opening the restaurant seemed natural, it did not come without its challenges.

“It was a hard six years, but it was a really good six years,” Tyson said.

The restaurant’s customer base grew exponentially over time, and today, support from regulars of Groovy Beast have set a precedent for the new location.

“It’s very flattering. I’m very appreciative for it, but it also, you know, that’s high expectations too so we really, we gotta deliver now. We can’t lay a dud,” Tyson said. “That kind of makes me feel good about the work we’ve put in the last six years, you know, we were doing the right thing even when sometimes we felt like we weren’t.”
