At Sweet Lew’s BBQ in Belmont, the price of brisket just inched higher. The neighborhood smokehouse has quietly added a $3 surcharge to every brisket order as retail beef costs surge, a change the owner says became unavoidable after his beef profit margin was slashed. Regulars are still lining up for smoked meats, but the new charge is putting a brighter spotlight on how big commodity shocks end up on small, local menus. For a tiny shop that often sells out, the fee is a blunt tool to steady the books while customers slowly adjust their habits.

As reported by Queen City News, Sweet Lew’s posted a sign that spells it out: $3 is now added to all brisket orders. Owner Lewis Donald told the outlet his beef costs have climbed roughly 89% since 2020 and that even with the surcharge, earlier margins have not been restored. Donald said he is weighing tweaks to other menu items rather than raising the listed brisket price, and customers told Queen City News they are still buying brisket, just not as often.

Federal data back up the squeeze. The St. Louis Fed’s FRED series of Bureau of Labor Statistics average-price information shows 100% ground beef at about $6.74 per pound in February 2026, according to FRED. The Bureau of Labor Statistics’ February Consumer Price Index release also shows beef and veal prices roughly 20% higher than a year earlier, putting acute pressure on restaurants that rely on beef as a staple menu item.

Why Prices Are Spiking

The supply picture helps explain why operators like Sweet Lew’s are feeling cornered. The USDA’s January 1 cattle inventory reported just 86.2 million head of cattle and calves, the smallest U.S. herd in decades, tightening slaughter volumes and keeping wholesale beef costs elevated, per USDA NASS. The USDA Economic Research Service’s Food Price Outlook also projects beef and veal prices could increase notably this year, driven by smaller herds and persistent demand.
