A new home for Thoughtful Bakery

After five years of farmers markets and online sales, Thoughtful Baking opens a brick-and-mortar store on Monroe Road in Oakhurst.

Johnson & Wales grad Mary Jayne Wilson started Thoughtful Baking in 2021, selling her pies, quiches, cookies and more at farmers markets. In 2024, she added farm-to-fridge coolers at Birdsong Brewing and Traditions Interiors at Park Road Shopping Center.

“I’ve been actively looking this entire time, for a space,” Wilson says. “I didn’t want to go full restaurant, but to have something outside of the markets where people could come. This was kind of perfect.”

Wilson previously shared a kitchen with Delectables by Holly Catering, where she had worked upon graduating from college. The new 3,500-square-foot space will allow her and her staff of three to increase production and expand menu offerings…
