A pair of bills before the Tennessee General Assembly would elevate the Southeast Tennessee delicacy hot slaw to a Volunteer State symbol. State Rep. Kevin Raper and Sen. Adam Lowe, both sent to Nashville by voters in the state’s southeast corner, introduced legislation in their respective chambers to make hot slaw – a chilled but spicy blend of cabbage, mustard, mayo, onions and peppers said to be unique to the Bradley County area – a designated state food and name Cleveland, Tennessee, the state’s hot slaw capital.
