A barbecue chef is beefing up his presence in Chicago

(WBBM NEWSRADIO) — Chef D’Andre Carter is the co-founder of soul and smoke in Chicago. He tells the Noon Business hour that he caught the barbecue cooking bug at an early age.

“I started off at grandma’s backyard. You know, every weekend my grandma, she would fire up that pit, and all the family would come over and we’ll get those ribs, rib tips. We got some hot wings going.”

Carter said that sharing food with the family is what cooking is all about.

“Barbecue to me was a way, you know, to just spend a really good time with each other and making people happy. And it’s all about sharing and just making people feel good.”

Soul & Smoke has three locations in Chicago, along with a food truck and a stand at Soldier Field. You can also find their products at Mariano’s stores.

Low and slow is the name of the game in barbecue cooking. Carter says they fire up the smoker early in the morning.

“Out pitmaster actually starts at 3 a.m. every single day and that’s our secret. We like to make everything at one location. So all the quality stays the same.”
