Hungry for European Flavors? Decades of Sausage-Making Tradition in Largo

Food has a way of carrying memories across generations. Family recipes, familiar aromas, and traditional methods can preserve a connection to a place long after someone has left it. For Jozsef Hirs, that connection has shaped a career spanning roughly four decades and eventually led him to bring Hungarian and German sausage-making traditions to Largo, Florida.

His path began in Tokod, Hungary, where sausage making was part of his family heritage. His grandfather and father passed down traditional techniques, giving him an early foundation in the butcher trade. He later attended the Food Processing School in Tata, where he expanded his knowledge by combining those traditions with modern food-processing technology.

“We didn’t simply move a sausage business,” Jozsef explains. “We brought a piece of Hungary, together with German traditions, and made it part of our new Florida home.”

At the center of the business is traditional Hungarian smoked sausage, known as kolbász. Made according to recipes and techniques Jozsef learned from his father and grandfather, it has become one of the market’s defining products…
