Jack’s Deli new owner wants to win back customers one sandwich at a time

Don Apel, the new owner of Jack’s Deli and Restaurant in University Heights, the Cleveland suburb, arrives at the deli every morning at 4 a.m. He places the day’s corned beef in a cold water bath, removing it after soaking for four hours, and then trims and slices it.

“People who order it lean and extra lean will notice the difference, and that’s a majority of what we sell,” Apel told the Columbus Jewish News.

He said he doesn’t want to “shock the system” with updates to the business at 14490 Cedar Road, instead looking to improve the existing deli and make customers feel like they’re in Katz’s Delicatessen, a New York City institution since 1888.
